4 ears fresh corn on the cob, husked and cleaned
2 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lime juice
2 tablespoons grated Parmesan cheese (optional, for serving)
2 tablespoons fresh cilantro, chopped (for serving)


Instructions

Step 1: Carefully prepare the corn ribs. Trim both ends of each corn cob so they sit flat. Stand one cob upright on a cutting board. Using a very sharp, heavy chef's knife, carefully slice down through the center of the cob, splitting it in half. Repeat for remaining cobs.
Step 2: Lay each corn half flat side down on the cutting board. Carefully slice each half lengthwise into 2 or 3 'ribs,' depending on the size of the cob. Each full cob should yield 4-6 ribs. Exercise extreme caution during this step.
Step 3: In a large bowl, combine the olive oil, smoked paprika, chili powder, garlic powder, onion powder, salt, and black pepper. Add the cut corn ribs to the bowl and toss thoroughly until all pieces are evenly coated with the seasoning mixture.
Step 4: For air frying (recommended): Preheat your air fryer to 400°F (200°C). Arrange the seasoned corn ribs in a single layer in the air fryer basket, ensuring they do not overlap. You will likely need to work in batches.
Step 5: Air fry for 12-18 minutes, flipping the ribs halfway through, until the corn is tender, slightly charred, and has curled into a 'rib' shape.
Step 6: For oven baking: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper. Arrange the seasoned corn ribs in a single layer, ensuring they have space between them. Bake for 20-30 minutes, flipping halfway, until tender and lightly golden brown.
Step 7: Once cooked, transfer the hot corn ribs to a serving platter. Squeeze fresh lime juice over them. Sprinkle generously with grated Parmesan cheese (if using) and chopped fresh cilantro.

Notes
