A light, fluffy, and high-protein alternative to traditional bread featuring blended cottage cheese and fresh blueberries.
Ingredients
3 large eggs, separated
1/2 cup full-fat cottage cheese
1/4 tsp cream of tartar
1 tbsp sugar-free maple syrup
1/2 cup fresh blueberries
1/2 tsp vanilla extract
1 pinch sea salt
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: Separate eggs; place whites in a clean bowl and yolks in a blender with cottage cheese, syrup, vanilla, and salt.
Step 3: Blend the yolk and cheese mixture until completely smooth.
Step 4: Add cream of tartar to egg whites and whip with a mixer until stiff, glossy peaks form.
Step 5: Gently fold the blended yolk mixture into the whipped whites using a spatula, being careful not to deflate.
Step 6: Fold in the blueberries very gently.
Step 7: Spoon onto the baking sheet in mounds and bake for 25-30 minutes until golden.
Notes
Ensure the bowl for whipping whites is completely clean and dry to achieve maximum volume.
