Ingredients
2 cups (about 16 oz) small-curd cottage cheese
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and freshly ground black pepper to taste
8 small corn or flour tortillas
Optional toppings: shredded lettuce, diced tomatoes, chopped red onion, fresh cilantro, avocado slices, salsa, lime wedges, hot sauce, sour cream/Greek yogurt
Instructions
Step 1: In a medium bowl, combine the cottage cheese, chili powder, smoked paprika, cumin, garlic powder, onion powder, and a generous pinch of salt and black pepper. Stir well until all the spices are evenly distributed throughout the cottage cheese. For an even creamier texture, you can blend about half of the mixture with an immersion blender or in a food processor until smooth, then stir it back into the remaining chunky cottage cheese.
Step 2: Heat a large non-stick skillet or cast-iron pan over medium heat. Once hot, add the olive oil. Add the seasoned cottage cheese mixture to the pan.
Step 3: Cook the cottage cheese mixture for about 5-7 minutes, stirring occasionally, until it’s heated through and has developed a slightly golden crust in places. This helps evaporate some of the excess moisture and intensifies the flavors.
Step 4: While the cottage cheese is cooking, warm your tortillas. You can do this by heating them in a separate dry skillet for about 30 seconds per side until pliable, wrapping them in a damp paper towel and microwaving for 20-30 seconds, or briefly charring them over an open gas flame.
Step 5: Assemble your tacos. Spoon a generous amount of the warm cottage cheese filling into each warmed tortilla.
Step 6: Top your tacos with your favorite additions like shredded lettuce, diced tomatoes, chopped red onion, fresh cilantro, avocado slices or guacamole, salsa, and a squeeze of lime juice.
