Description

1 pint cherry tomatoes, halved or quartered
1/2 red onion, finely diced
1-2 jalapeños, seeded and minced (optional, adjust to taste)
1/2 cup fresh cilantro, chopped (plus more for garnish)
2 ripe avocados, diced, just before serving
1/4 cup extra virgin olive oil
1/4 cup fresh lime juice (from 2-3 limes)
2 tablespoons apple cider vinegar
1 clove garlic, minced
1 teaspoon sugar or agave nectar
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
Salt and freshly ground black pepper to taste


Instructions
