Description

A vibrant and refreshing Texan-inspired dip or salad, packed with black-eyed peas, black beans, corn, colorful bell peppers, and a zesty lime vinaigrette. Perfect for potlucks, BBQs, or a healthy snack!

1 (15-ounce) can black-eyed peas, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1.5 cups fresh or frozen (thawed) corn kernels
1 red bell pepper, finely diced
1 green bell pepper, finely diced
1 yellow bell pepper, finely diced
1/2 red onion, finely diced
1-2 jalapeños, seeded and minced (adjust to taste)
1/2 cup fresh cilantro, chopped
1/3 cup extra virgin olive oil
1/4 cup apple cider vinegar
3 tablespoons fresh lime juice (from 1-2 limes)
1 tablespoon granulated sugar (or maple syrup)
1 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt, or to taste
1/4 teaspoon black pepper, or to taste
Optional: dash of hot sauce


Instructions

Step 1: Begin by finely dicing all your fresh vegetables – red onion, red bell pepper, green bell pepper, yellow bell pepper, and jalapeño (if using). Aim for pieces of roughly the same size for balanced bites and elegant presentation.
Step 2: Open your cans of black-eyed peas and black beans. Pour them into a colander and rinse thoroughly under cold running water until the water runs clear. Drain them exceptionally well, shaking the colander to remove all excess moisture. If using frozen corn, thaw it completely and gently squeeze out any excess water.
Step 3: In a large, spacious mixing bowl, combine the thoroughly rinsed and drained black-eyed peas, black beans, corn, all your finely diced bell peppers, red onion, and minced jalapeño. Add the fresh chopped cilantro. Give it a gentle toss to distribute the ingredients evenly.
Step 4: In a separate small bowl or a jar with a tight-fitting lid, whisk together the extra virgin olive oil, apple cider vinegar, fresh lime juice, sugar (or maple syrup), ground cumin, chili powder, garlic powder, salt, and black pepper. Whisk vigorously until the sugar is dissolved and the dressing is well emulsified. Taste and adjust seasonings as needed.
Step 5: Pour the freshly prepared dressing evenly over the colorful vegetable and bean mixture in the large bowl. Toss gently but thoroughly, using a large spoon or spatula, to ensure every single ingredient is coated in that delicious, zesty dressing.
Step 6: Cover the bowl tightly with plastic wrap or transfer it to an airtight container and refrigerate for at least 30 minutes, or preferably 2-3 hours. This chilling period allows the flavors to meld, deepen, and fully develop, transforming a simple mix of ingredients into a harmonious and incredibly flavorful dish.
Step 7: Just before you’re ready to serve, give the cowboy caviar a final taste. The flavors will have had time to settle, and you might find it needs a little more salt, a fresh squeeze of lime juice for brightness, or another pinch of sugar to perfectly balance the tang. Give it a final stir, and it’s ready to impress!

Notes

For the best flavor, allow the cowboy caviar to chill for at least 2-3 hours, or even overnight, before serving. This dish is perfect for meal prepping as flavors deepen over time. Adjust jalapeño to your desired spice level.
