A supremely flavorful and easy-to-make breakfast casserole featuring crispy hash browns, savory bacon, sharp cheddar cheese, and irresistible ranch seasoning.
Ingredients
1 (30-ounce) bag frozen shredded hash browns, thawed
1 cup crispy bacon, cooked and crumbled
2 cups shredded sharp cheddar cheese, divided
1/2 cup dry ranch seasoning mix
6 large eggs
1 cup milk (whole or 2%)
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Optional: chopped green onions, for garnish
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the thawed hash browns, crumbled crispy bacon, 1.5 cups of the shredded cheddar cheese, and the ranch seasoning mix. Toss everything together until well combined.
Step 3: In a separate medium bowl, whisk together the eggs, milk, black pepper, and garlic powder until the mixture is smooth and evenly combined.
Step 4: Spread the hash brown mixture evenly into the bottom of the prepared baking dish. Pour the whisked egg mixture over the hash browns, making sure it's distributed as evenly as possible. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Step 5: Bake for 45-50 minutes, or until the casserole is golden brown on top and the eggs are fully set. An inserted knife should come out clean.
Step 6: Remove the casserole from the oven and let it rest for 5-10 minutes before slicing and serving. Garnish with fresh chopped green onions, if desired.
Notes
For an extra crispy topping, you can sprinkle a little extra cheese or even some crushed cornflakes mixed with melted butter over the casserole during the last 15 minutes of baking.
