2 (10 ounce) packages frozen chopped spinach, thawed and thoroughly squeezed dry
2 tablespoons unsalted butter
1 large shallot, finely minced
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 1/2 cups half-and-half (or a mix of milk and light cream)
4 ounces cream cheese, softened
1/2 cup freshly grated Parmesan cheese, plus more for garnish
1/4 teaspoon freshly grated nutmeg
Salt to taste
Freshly ground black pepper to taste


Instructions

Step 1: Melt the unsalted butter in a large, heavy-bottomed skillet or Dutch oven over medium heat.
Step 2: Add the minced shallots and sauté for 3-4 minutes until softened and translucent, being careful not to brown them.
Step 3: Stir in the minced garlic and cook for an additional 1 minute until fragrant. Do not let the garlic burn.
Step 4: Sprinkle the all-purpose flour over the shallots and garlic. Cook, stirring constantly, for 1-2 minutes to create a roux and cook out the raw flour taste.
Step 5: Gradually whisk in the half-and-half, pouring slowly and continuously whisking to prevent lumps. Continue to whisk until the mixture is smooth and begins to thicken, about 3-5 minutes.
Step 6: Reduce the heat to low. Add the softened cream cheese, stirring until it is completely melted and smoothly incorporated into the sauce.
Step 7: Stir in the thoroughly drained spinach, mixing well until it is fully coated and warmed through, about 2-3 minutes.
Step 8: Remove the skillet from the heat. Stir in the 1/2 cup of freshly grated Parmesan cheese, freshly grated nutmeg, salt, and freshly ground black pepper. Taste and adjust seasonings as needed.
