Ingredients
1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
1 tbsp olive oil
1 tbsp butter
1 tsp garlic powder
Salt and freshly ground black pepper to taste
8 oz cremini mushrooms, sliced
3 cloves garlic, minced
2 tbsp all-purpose flour
1 cup chicken broth
1 cup heavy cream
1 tsp Italian seasoning
5 oz fresh spinach
1/2 cup grated Parmesan cheese
Instructions
Step 1: Heat olive oil and butter in a large skillet over medium-high heat. Season the chicken pieces generously with salt, black pepper, and garlic powder. Add chicken to the hot skillet and cook for 5-7 minutes, flipping occasionally, until golden brown and cooked through. Remove chicken from skillet and set aside.
Step 2: In the same skillet, add sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until they release their liquid and turn golden brown. Add minced garlic and cook for another minute until fragrant.
Step 3: Sprinkle flour over the mushrooms and garlic, stirring for 1 minute to coat. Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer, then stir in the heavy cream. Season with Italian seasoning, salt, and pepper.
Step 4: Return the cooked chicken to the skillet. Add the fresh spinach and cook, stirring gently, until it wilts down, about 2-3 minutes. Stir in the Parmesan cheese until melted and the sauce is smooth and creamy.
Step 5: Taste and adjust seasonings as needed. Serve immediately with your favorite side dish.
Notes
For best results, do not overcrowd the pan when browning the chicken and mushrooms, as this can steam them instead of browning. Cook in batches if necessary. This recipe is also delicious with a splash of white wine added after the garlic for extra depth before adding the broth.
