Ingredients
12-15 fresh garlic scapes, buds removed
1/2 cup extra virgin olive oil
1/2 cup grated Parmesan cheese
1/4 cup pine nuts, toasted
1 lb Fusilli or Gemelli pasta
1/2 cup heavy cream
2 balls of fresh burrata cheese
Salt and black pepper to taste
Fresh basil leaves for garnish
Instructions
Step 1: Boil a large pot of salted water and cook pasta until al dente; reserve 1 cup of pasta water.
Step 2: Process scapes, pine nuts, and Parmesan in a food processor until finely chopped.
Step 3: Slowly stream in olive oil while processing until a smooth pesto forms.
Step 4: Warm heavy cream in a skillet over low heat and whisk in the pesto until creamy.
Step 5: Add cooked pasta to the skillet and toss to coat, adding reserved water if needed.
Step 6: Plate the pasta and top with whole burrata balls, breaking them open gently.
Step 7: Garnish with fresh basil and black pepper; serve immediately.
Notes
Ensure scapes are fresh and curly for the best flavor. For a vegan-friendly version, use coconut cream and omit the cheese for nutritional yeast.
