A vibrant, tropical breakfast featuring aromatic pandan, creamy coconut milk, and a zesty fresh mango puree.
Ingredients
1 cup old-fashioned rolled oats
1 cup full-fat coconut milk (canned or carton)
1 tablespoon chia seeds
1-2 tablespoons maple syrup or agave
1/2 teaspoon pandan extract (or to taste)
1 ripe mango, divided (half pureed, half cubed)
Pinch of sea salt
Optional: Toasted coconut flakes for garnish
Instructions
Step 1: In a large mason jar, whisk together the rolled oats, chia seeds, and sea salt.
Step 2: Stir in the coconut milk, sweetener, and pandan extract until the liquid is a uniform green color.
Step 3: Seal the jar and refrigerate for at least 6 hours or overnight.
Step 4: Blend half of the mango into a smooth puree for the drizzle.
Step 5: In the morning, stir the oats and top with the cubed mango, mango drizzle, and toasted coconut flakes.
Notes
Adjust the pandan extract carefully as some brands are significantly more potent than others. For a lower fat version, use light coconut milk.
