Description
A rich and comforting 30-minute meal featuring velvety butter beans in a garlic-parmesan cream sauce with spinach and artichokes.
Ingredients
2 cans (15 oz each) butter beans, drained and rinsed
1 jar (12 oz) marinated artichoke hearts, drained and chopped
4 cups fresh baby spinach
1 cup heavy cream
1/2 cup freshly grated parmesan cheese
2 shallots, finely minced
4 cloves garlic, minced
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1/4 teaspoon red pepper flakes
Salt and black pepper to taste
Instructions
Step 1: Heat olive oil in a large skillet over medium heat and sauté shallots and garlic until fragrant.
Step 2: Stir in the butter beans and artichoke hearts, cooking for 2 minutes.
Step 3: Add heavy cream, parmesan, red pepper flakes, salt, and pepper; simmer until thickened.
Step 4: Fold in spinach in batches until wilted and vibrant.
Step 5: Stir in lemon juice and serve immediately.
Notes
Rinse the beans well to ensure a smooth sauce. For a vegan option, use coconut milk and nutritional yeast.
