Ingredients
1 cup unsalted butter, softened
1 1/4 cups granulated sugar, divided
1 large egg
2 teaspoons vanilla extract, divided
2 1/4 cups all-purpose flour
1/2 teaspoon salt
2 cups heavy cream
5 large egg yolks
1 tablespoon vanilla bean paste
Instructions
Step 1: Preheat oven to 350°F (175°C) and line a 9x9 baking pan with parchment paper.
Step 2: Cream butter and 3/4 cup sugar until fluffy; mix in egg and 1 tsp vanilla.
Step 3: Stir in flour and salt until a dough forms, then press into the pan and bake for 15 minutes.
Step 4: Reduce oven to 325°F. Heat heavy cream in a saucepan until simmering.
Step 5: Whisk egg yolks, remaining 1/2 cup sugar, vanilla bean paste, and 1 tsp vanilla; slowly whisk in hot cream.
Step 6: Pour custard over the crust and bake for 25-30 minutes until set but slightly jiggly.
Step 7: Cool to room temperature, then chill in the fridge for at least 4 hours.
Step 8: Sprinkle sugar over the chilled custard and caramelize with a torch before slicing.
Notes
Ensure the bars are completely cold before torching to prevent the custard from melting.
