Everything you love about a cheeseburger, rolled up tight and fried until the outside crackles. These crispy cheeseburger wraps start with juicy ground beef cooked down with onion, garlic and a spoon of tomato paste. Then comes a tangy homemade burger sauce and a big handful of cheddar and mozzarella. Each wrap is rolled like a burrito and pan-fried seam side down, so it seals itself shut and turns deep golden on every side.
The best part comes when you tear one open. The tortilla shatters, the cheese stretches, and the beef spills out glossy with sauce. Dip it straight into the extra burger sauce and you have a dinner that tastes like a drive-through run but comes together in one skillet in about 30 minutes.
They are a weeknight dinner, a game-day snack and a lunchbox hero all at once. You can make the filling ahead, roll the wraps in minutes and fry them when everyone is hungry.

Crispy Cheeseburger Wraps
Why You'll Love These Wraps
- Real crunch. Pan-frying in a thin layer of oil gives a blistered, crackly shell that stays crisp while you eat.
- The cheese pull. Mixing sharp cheddar for flavor with low-moisture mozzarella for stretch gives you both taste and that long, gooey pull.
- Burger flavor in every bite. The sauce goes inside the wrap and on the side, so nothing tastes dry.
- Simple ingredients. Ground beef, tortillas, cheese and fridge staples you probably already have.
How to Make Crispy Cheeseburger Wraps
Key Ingredients
- Ground beef: 80/20 beef has enough fat to stay juicy. If you use leaner beef, add a splash of extra oil to the pan.
- Onion and garlic: Diced small so they melt into the beef instead of poking through the tortilla.
- Tomato paste: One tablespoon deepens the color and adds the savory, slightly sweet note you get from a grilled burger with ketchup.
- Spices: Salt, black pepper, smoked paprika, garlic powder and onion powder. Smoked paprika is what makes the filling taste "off the grill."
- Burger sauce: Mayonnaise, ketchup, yellow mustard, dill pickle relish and a little pickle juice. It is creamy, tangy and a little sweet, just like a classic fast-food sauce.
- Cheese: Shredded cheddar plus low-moisture mozzarella. Shred your own if you can, because bagged cheese has anti-caking powder that melts less smoothly.
- Flour tortillas: Large, soft 10-inch tortillas roll without cracking. Warm them for 10 seconds in the microwave if they feel stiff.

Preparation
1. Cook the filling. Heat a little oil in a large skillet, add the diced onion and cook until soft and translucent. Stir in the garlic for 30 seconds, then add the ground beef. Break it into small crumbles as it browns, since small pieces make neater wraps. Stir in the tomato paste and spices and cook until the beef is browned and the pan looks glossy. Let it cool for 5 minutes so the steam doesn't soften the tortillas.
2. Stir the sauce. Whisk the mayonnaise, ketchup, mustard, relish, pickle juice, paprika and garlic powder together. Keep about half for dipping.
3. Fill and roll. Spoon a line of beef across the lower third of each tortilla. Add a spoonful of sauce and a generous handful of both cheeses. Fold the bottom edge over the filling, tuck in the sides and roll tightly, like a burrito.
4. Pan-fry until golden. Wipe out the skillet, add a thin layer of oil and set it over medium heat. Place the wraps seam side down and cook for 2 to 3 minutes until deep golden, then turn and crisp the other sides. Medium heat matters here: too hot and the shell burns before the cheese melts.
5. Serve hot. Rest the wraps for one minute, then cut or tear them open and serve with the extra burger sauce for dipping.

Serving Ideas
Serve the wraps with crispy fries, sweet potato wedges or a crunchy coleslaw. For a party, cut each wrap into thirds and stand them in a bowl next to the sauce. Shredded lettuce, sliced tomato and pickle chips on the side make it feel like a full burger plate.
Make-Ahead and Storage
- Make ahead: Cook the filling up to 2 days ahead and keep it chilled. Roll and fry just before serving.
- Freeze: Roll the wraps (unfried), wrap them individually and freeze for up to 2 months. Fry from frozen over medium-low heat, about 4 to 5 minutes per side, until hot all the way through.
- Leftovers: Refrigerate cooked wraps for up to 3 days. Reheat in a dry skillet or at 375°F (190°C) for 8 to 10 minutes so they crisp up again. Skip the microwave, which makes the shell chewy.
Variations
- Bacon cheeseburger: Add crumbled crispy bacon with the cheese.
- Spicy: Stir chopped pickled jalapeños into the beef and a pinch of cayenne into the sauce.
- Air fryer: Brush the rolled wraps with oil and air fry at 400°F (200°C) for 8 to 10 minutes, turning halfway. See our Air Fryer Cheeseburger Wraps for the full air fryer version.
- Turkey: Use ground turkey with an extra teaspoon of oil and a little more smoked paprika.

Ingredients
Beef filling
1 tbsp vegetable oil
1 medium yellow onion, finely diced
3 cloves garlic, minced
1 lb (450 g) ground beef, 80/20
1 tbsp tomato paste
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
Burger sauce
1/2 cup (115 g) mayonnaise
2 tbsp ketchup
1 tbsp yellow mustard
2 tbsp dill pickle relish
1 tsp pickle juice
1/2 tsp smoked paprika
1/4 tsp garlic powder
Wraps
6 large (10-inch) flour tortillas
1 1/2 cups (170 g) shredded cheddar
1 cup (115 g) shredded low-moisture mozzarella
2–3 tbsp vegetable oil, for frying
Instructions
Step 1: Heat 1 tbsp oil in a large skillet over medium heat. Cook the onion for 3–4 minutes until soft. Add the garlic and cook for 30 seconds.
Step 2: Add the ground beef and break it into small crumbles. Cook for 5–6 minutes until browned. Drain excess fat if needed.
Step 3: Stir in the tomato paste, salt, pepper, smoked paprika, garlic powder and onion powder. Cook for 2 minutes more, then let the filling cool for 5 minutes.
Step 4: Whisk all the burger sauce ingredients together. Set half aside for dipping.
Step 5: Lay a tortilla flat. Spoon about 1/2 cup beef across the lower third, then top with 1 tbsp sauce and a handful of cheddar and mozzarella.
Step 6: Fold the bottom over the filling, tuck in the sides and roll up tightly. Repeat with the remaining tortillas.
Step 7: Heat a thin layer of oil in a clean skillet over medium heat. Fry the wraps seam side down for 2–3 minutes until golden, then turn and cook 2–3 minutes more until crisp all over.
Step 8: Rest for 1 minute, then serve hot with the reserved burger sauce.
Notes
Cool the filling slightly before rolling so the tortillas stay crisp. Keep the heat at medium so the cheese melts fully before the shell gets too dark. Low-moisture mozzarella gives the longest cheese pull; fresh mozzarella is too wet. To freeze, wrap unfried wraps individually for up to 2 months and fry from frozen over medium-low heat, 4–5 minutes per side.
