A rustic, one-pan Irish comfort dish featuring golden-brown potatoes and savory thick-cut Irish bacon rashers.
Ingredients
1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced (1/2-inch cubes)
8 oz thick-cut Irish bacon (rashers), chopped
1 large yellow onion (8 oz), thinly sliced
2 tablespoons butter (or olive oil)
2 tablespoons fresh parsley, chopped
1/2 teaspoon sea salt
1/4 teaspoon freshly cracked black pepper
1/2 teaspoon garlic powder (optional)
1/4 teaspoon smoked paprika (optional)
Instructions
Step 1: Scrub and dice the potatoes into 1/2-inch cubes. Ensure they are dry by patting with a paper towel.
Step 2: Heat a large skillet over medium heat. Add chopped bacon and cook until golden and crispy (6-8 minutes).
Step 3: Push bacon to the side and add sliced onions. Sauté until softened and lightly golden (2-3 minutes).
Step 4: Stir in the diced potatoes and toss with salt, pepper, and optional seasonings to coat in bacon fat.
Step 5: Spread into an even layer and cook undisturbed for 5 minutes to develop a crust.
Step 6: Flip and continue cooking for 10-15 minutes, stirring occasionally, until potatoes are tender and crispy.
Step 7: Garnish with fresh parsley and serve hot.
Notes
For best results, use a cast iron skillet to maximize the crispiness of the Yukon Gold potatoes.
