Ingredients
1.5 lbs boneless skinless chicken breasts
1 cup BBQ sauce (your favorite brand)
1 can (20 oz) crushed pineapple in juice
2 tablespoons soy sauce
1 teaspoon garlic powder
1/2 teaspoon ground ginger
6 brioche or Hawaiian buns
Optional: Red onion slices and cilantro for garnish
Instructions
Step 1: Place the chicken breasts in a single layer at the bottom of your slow cooker.
Step 2: In a small bowl, whisk together the BBQ sauce, crushed pineapple (with juice), soy sauce, garlic powder, and ground ginger.
Step 3: Pour the sauce mixture over the chicken, ensuring each breast is well-coated for the crock pot hawaiian chicken sandwiches.
Step 4: Cover and cook on HIGH for 3-4 hours or LOW for 6-7 hours until the chicken is tender and easily shredded.
Step 5: Remove the chicken to a plate and shred with two forks, then return it to the slow cooker to soak in the juices.
Step 6: Toast the buns and heap a generous portion of the Hawaiian chicken onto each, topping with red onion and cilantro if desired.
Notes
For a thicker sauce, simmer the liquid in a saucepan for 5-10 minutes before adding the shredded chicken back in.
