Description

1.5 lbs boneless, skinless chicken breasts or thighs
1 (14.5 ounce) can diced tomatoes, undrained
1 (10 ounce) can Rotel diced tomatoes with green chilies, undrained
1 medium onion, chopped
2 cloves garlic, minced
1 packet (1 ounce) taco seasoning mix (or 2 tbsp homemade)
1 tsp cumin
1/2 tsp chili powder
1/4 cup chopped fresh cilantro (for garnish, optional)
Salt and black pepper to taste
Optional: 1/4 cup chicken broth (if a bit more liquid is desired)


Instructions

Step 1: Prepare the Ingredients. Dice your onion and mince your garlic. If using fresh cilantro, chop it and set aside for garnish.
Step 2: Combine in Slow Cooker. Place the chicken breasts or thighs at the bottom of your slow cooker. Evenly sprinkle the taco seasoning, cumin, and chili powder over the chicken.
Step 3: Add Remaining Ingredients. Pour in the diced tomatoes and Rotel (undrained). Add the chopped onion and minced garlic. If desired, pour in the chicken broth for extra liquid. Season lightly with salt and pepper.
