Description
Indulge in a classic Philly Cheesesteak without the fuss! This slow cooker recipe features incredibly tender, savory beef, caramelized onions and peppers, all smothered in melty provolone cheese and served on toasted hoagie rolls. Perfect for an easy, comforting weeknight meal.
Ingredients
2-3 lbs boneless chuck roast, trimmed of excess fat and cut into 2-3 inch chunks
1 tbsp olive oil (optional, for searing)
1 large yellow onion, thinly sliced
1 large green bell pepper, thinly sliced
1 cup beef broth
1 tsp garlic powder
1 tsp onion powder
1/2 tsp black pepper
1/2 tsp salt (or to taste)
8 hoagie rolls, split and lightly toasted
16 slices provolone cheese (or your favorite melting cheese)
Instructions
Step 1: If searing, heat olive oil in a large skillet over medium-high heat. Sear beef chunks on all sides until nicely browned, about 2-3 minutes per side. Transfer seared beef to the slow cooker. If not searing, place raw beef chunks directly into the slow cooker.
Step 2: Layer the thinly sliced yellow onion and green bell pepper over the beef in the slow cooker.
Step 3: Sprinkle the beef and vegetables with garlic powder, onion powder, black pepper, and salt.
Step 4: Pour the beef broth over the ingredients in the slow cooker.
Step 5: Cover and cook on LOW for 6-8 hours, or on HIGH for 4-5 hours, until the beef is fork-tender and easily shreddable.
Step 6: Carefully remove the cooked beef from the slow cooker and place it on a cutting board. Using two forks, shred the beef into bite-sized pieces. Return the shredded beef to the slow cooker, stirring it into the cooking liquid and vegetables.
Step 7: To serve, lightly toast your hoagie rolls. Generously spoon the beef and veggie mixture onto the toasted rolls. Top each sandwich with 2 slices of provolone cheese. If desired, place under a broiler for 1-2 minutes until the cheese is melted and bubbly.
Notes
For best flavor, don't skip the searing step for the beef. You can also sauté the onions and peppers briefly before adding to the slow cooker. Leftovers can be stored in an airtight container for up to 3-4 days and reheated gently.
