Ingredients
2 lbs boneless, skinless chicken breasts or thighs
1 (10.5 oz) can cream of chicken soup
1 (8 oz) block cream cheese, softened
1 (1 oz) packet dry ranch seasoning mix
Salt and black pepper to taste
Instructions
Step 1: Lightly spray the inside of your slow cooker with cooking spray, or use a slow cooker liner. Place the chicken at the bottom.
Step 2: In a medium bowl, whisk together the cream of chicken soup, softened cream cheese, and dry ranch seasoning mix until well combined and smooth.
Step 3: Pour the cream cheese and ranch mixture evenly over the chicken in the slow cooker, ensuring all pieces are coated.
Step 4: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, or until the chicken is fork-tender and easily shreds (internal temperature should reach 165°F / 74°C).
Step 5: Remove the cooked chicken from the slow cooker and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir it into the creamy sauce until well coated.
Step 6: Taste the crockpot ranch chicken and season with additional salt and pepper if needed. Serve hot with your favorite sides.
