Description

A crisp and vibrant summer salad featuring sweet strawberries, hydrating cucumbers, and tangy feta cheese in a lime-honey vinaigrette.


Ingredients

2 large English cucumbers, sliced
1 pound fresh strawberries, hulled and quartered
1/2 cup crumbled feta cheese
1/4 cup red onion, thinly sliced
1/4 cup fresh mint leaves, chopped
3 tbsp extra virgin olive oil
2 tbsp fresh lime juice
1 tbsp honey
1/2 tsp sea salt
1/4 tsp black pepper


Instructions

Step 1: Slice the cucumbers into half-moons and hull the strawberries into quarters.
Step 2: Soak the red onion slices in ice water for 5 minutes to mellow the flavor, then drain well.
Step 3: In a small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until emulsified.
Step 4: Combine cucumbers, onions, and mint in a large bowl and toss with the dressing.
Step 5: Gently fold in the strawberries and feta cheese right before serving to maintain texture.
