A vibrant and healthy recipe that transforms humble dandelion greens into a flavorful side dish with garlic, olive oil, and fresh lemon juice. A delicious way to enjoy one of nature's most nutritious 'weeds'.
Ingredients
8 cups fresh dandelion greens, washed and chopped (about 8 oz)
3 cloves garlic, minced
2 tablespoons extra virgin olive oil
1/2 lemon, juiced
Salt to taste
Freshly ground black pepper to taste
Optional: pinch of red pepper flakes
Instructions
Step 1: Wash the dandelion greens thoroughly, removing any tough stems or yellowed leaves. Roughly chop them into 1-2 inch pieces.
Step 2: In a large skillet or sauté pan, heat the olive oil over medium heat until shimmering.
Step 3: Add the minced garlic (and red pepper flakes, if using) to the hot oil and sauté for 30-60 seconds, until fragrant. Be careful not to burn the garlic.
Step 4: Add the chopped dandelion greens to the pan. They will pile up, but will wilt down significantly as they cook.
Step 5: Sauté the greens for 5-7 minutes, stirring occasionally, until they are tender and wilted. If they begin to stick, add a tablespoon or two of water or vegetable broth.
Step 6: Season the greens generously with salt and freshly ground black pepper. Taste and adjust seasoning as needed.
Step 7: Remove the pan from the heat and squeeze the fresh lemon juice over the cooked greens. Toss to combine.
Step 8: Serve the sautéed dandelion greens immediately as a nutritious and flavorful side dish.
Notes
For best results, use young, tender dandelion greens as they tend to be less bitter. A quick soak in cold water can also help reduce bitterness. Adjust lemon juice and seasoning to your preference.
