Ingredients
24 chocolate sandwich cookies (like Oreos)
6 tbsp unsalted butter, melted
8 oz cream cheese, softened
1 cup creamy peanut butter
1 cup powdered sugar
1 tsp vanilla extract
2 cups heavy whipping cream, divided
4 oz semi-sweet chocolate, finely chopped
Instructions
Step 1: Pulse cookies into fine crumbs and mix with melted butter. Press into a 9-inch pie plate and freeze for 15 minutes.
Step 2: Beat softened cream cheese and powdered sugar until smooth. Add peanut butter and vanilla, mixing until combined.
Step 3: In a separate bowl, whip 1.5 cups of heavy cream to stiff peaks. Fold into the peanut butter mixture.
Step 4: Heat the remaining 1/2 cup cream and pour over chopped chocolate. Stir until a smooth ganache forms.
Step 5: Layer the peanut butter mousse and ganache into the crust, swirling with a knife to create a pattern.
Step 6: Chill for at least 6 hours before serving.
