Description

1 (8-ounce) package full-fat cream cheese, softened
1/2 cup sour cream (full-fat recommended)
1/2 cup mayonnaise (full-fat recommended)
1 1/2 cups finely diced dill pickles (about 3-4 medium pickles)
2-3 tablespoons reserved pickle juice, plus more if needed
1/4 cup fresh dill, finely chopped, plus extra for garnish
1 small garlic clove, minced (or 1/2 tsp garlic powder)
1 small shallot, finely minced (optional)
1/4 teaspoon black pepper, or to taste
Pinch of salt, to taste (pickles are salty, so add carefully)


Instructions

Step 1: Finely dice your dill pickles and gently blot away excess moisture using a paper towel. This prevents the dip from becoming watery.
Step 2: Finely chop the fresh dill. If using, mince the garlic clove and shallot very finely.
Step 3: In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Using an electric hand mixer, beat until the mixture is completely smooth and creamy, about 2-3 minutes. Scrape down the sides of the bowl as needed.
Step 4: Add the diced pickles, chopped fresh dill, minced garlic, and minced shallot (if using) to the creamy base. Start by adding 2 tablespoons of pickle juice.
Step 5: Mix everything thoroughly with a spatula or spoon until well combined. Taste the Dill Pickle Dip and add additional pickle juice, 1/2 tablespoon at a time, until you achieve your desired tang and consistency.
Step 6: Season the Dill Pickle Dip with black pepper and a pinch of salt if needed (remember pickles are salty). Stir well.
Step 7: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and deepen. This chilling time is crucial for the best flavor.
