Ingredients
12 ounces high-quality chocolate (dark, milk, or white)
1.5 tablespoons dried culinary-grade English lavender
1/4 teaspoon fine sea salt (optional)
1/2 vanilla bean, scraped (optional)
Instructions
Step 1: Line a large baking sheet with high-quality parchment paper or a silicone mat.
Step 2: Finely crush the dried lavender buds using a mortar and pestle or a spice grinder to release their natural oils.
Step 3: Melt the chocolate using a double boiler over low heat, stirring continuously until smooth and glossy.
Step 4: Stir the crushed lavender and salt into the melted chocolate and let it steep for 5 minutes away from the heat.
Step 5: Pour the chocolate into a piping bag and pipe small dots onto the prepared sheet, lifting upwards to create the chip point.
Step 6: Let the chips cool completely at room temperature or in a cool pantry until hard and firm to the touch.
