Ingredients
2 large flour tortillas
1/2 cup plain cream cheese
1 cup fresh blueberries
2 tablespoons honey
1/2 teaspoon ground cinnamon
1 tablespoon butter (optional for frying)
Instructions
Step 1: Spread the cream cheese evenly over one half of each tortilla, leaving a 1/2 inch border at the edges.
Step 2: Distribute the blueberries over the cream cheese and sprinkle with cinnamon and honey.
Step 3: Fold each tortilla in half and press down gently to form a semi-circle.
Step 4: Heat a non-stick skillet over medium heat and add butter if using.
Step 5: Cook each quesadilla for about 3-4 minutes per side until the tortilla is golden and crispy.
Step 6: Remove from the pan and let cool for 1 minute before slicing into wedges.
Notes
Ensure blueberries are very dry before adding to the filling to maintain a crispy tortilla texture.
