Cinnamon Sugar Pumpkin Bread

Description

A delightful and easy fall recipe for moist pumpkin bread topped with a crunchy cinnamon sugar layer.


Ingredients

2 cups all-purpose flour
1 1/2 teaspoons baking powder
2 teaspoons pumpkin pie spice
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup light brown sugar, packed
1 (15-ounce) can pumpkin puree
1/2 cup vegetable oil
1/2 cup unsweetened vanilla almond milk
1 tablespoon molasses
1 teaspoon vanilla extract
For Topping:
1 tablespoon granulated sugar
1/2 teaspoon ground cinnamon


Instructions

Step 1: Preheat your oven to 400°F (200°C). Grease and flour three mini loaf pans or one standard-sized loaf pan.
Step 2: In a large bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt.
Step 3: In a separate medium bowl, whisk together the granulated sugar, brown sugar, pumpkin puree, vegetable oil, almond milk, molasses, and vanilla extract until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Be careful not to overmix; a few lumps are fine.
Step 5: Evenly distribute the batter between the prepared pans, filling each about 2/3 full.
Step 6: In a small bowl, combine 1 tablespoon granulated sugar and 1/2 teaspoon ground cinnamon for the topping. Sprinkle this mixture evenly over the top of each loaf.
Step 7: Place the pans on a baking sheet for easier handling. Bake for 40-43 minutes (for a standard loaf) or 30-35 minutes (for mini loaves), or until a toothpick inserted into the center of the bread comes out clean.
Step 8: Let the bread cool in the pans for about 15 minutes before carefully transferring to a wire rack to cool completely. Slice and enjoy!

Notes

For an even richer flavor, you can add 1/2 cup of chopped walnuts or pecans to the batter. This bread freezes exceptionally well for up to 3 months.
