An incredibly easy and flavorful slow cooker recipe for tender Mexican-spiced chicken, perfect for tacos, burritos, or salads.
Ingredients
1.5 pounds boneless, skinless chicken breasts or thighs
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes (with green chilies for extra flavor)
1 packet taco seasoning (or homemade taco seasoning)
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Optional toppings: avocado, cilantro, lime wedges, shredded cheese, sour cream
Instructions
Step 1: Place the chicken breasts or thighs at the bottom of the crockpot. Season with salt, pepper, garlic powder, and onion powder.
Step 2: Pour the black beans, corn, diced tomatoes, and taco seasoning over the chicken. Stir gently to combine, ensuring the chicken is well coated with the seasoning and surrounded by the other ingredients.
Step 3: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.
Step 4: Once cooked, remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot, mixing it with the other ingredients for even flavor distribution.
Step 5: Enjoy the Mexican chicken in tacos, burritos, or over rice. Top with your favorite toppings like avocado, cilantro, lime juice, shredded cheese, or sour cream.
Notes
For extra creaminess, stir in 1/4 cup cream cheese or sour cream after shredding the chicken. This dish freezes wonderfully for future meals!
