Description
A velvety, tart, and intensely aromatic spread made with fresh Key limes and creamy butter.
Ingredients
1/2 cup fresh Key lime juice (about 12-15 Key limes)
1 tablespoon Key lime zest, finely grated
3/4 cup granulated sugar
3 large egg yolks, room temperature
1/2 cup unsalted butter, cold and cubed
1 pinch of salt
Instructions
Step 1: Set up a double boiler by placing a heat-proof bowl over a simmering pot of water.
Step 2: Whisk the egg yolks and sugar in the bowl until smooth and pale yellow.
Step 3: Slowly add the Key lime juice and zest, whisking constantly to prevent the eggs from curdling.
Step 4: Cook for 8-10 minutes, stirring continuously, until the mixture thickens and coats the back of a spoon.
Step 5: Remove from heat and whisk in cold butter cubes one at a time until fully incorporated and glossy.
Step 6: Strain through a fine-mesh sieve and refrigerate with plastic wrap touching the surface.
Notes
Always strain the curd while hot to ensure the smoothest possible texture.
