Description

This easy Key Lime Jello Cake recipe delivers a moist, fluffy, and vibrant dessert bursting with tangy lime flavor, perfect for any occasion.


Ingredients

1 1/2 cups Crisco oil
1 1/3 cups sugar
5 large eggs, room temperature
2 1/4 cups all-purpose White Lily flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 oz lime Jello (entire package)
1/2 cup orange juice, room temperature
1 tablespoon lemon juice (Realemon brand)
1/2 teaspoon vanilla extract
3-4 drops lime green food coloring


Instructions

Step 1: Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
Step 2: In a large mixing bowl, combine Crisco oil and sugar. Beat on medium speed until well blended.
Step 3: Add eggs one at a time, beating well after each addition.
Step 4: In a separate bowl, sift together flour, baking powder, baking soda, salt, and lime Jello powder.
Step 5: Gradually add the dry ingredients to the wet mixture, alternating with orange juice, beginning and ending with the dry ingredients. Mix just until combined.
Step 6: Stir in lemon juice, vanilla extract, and lime green food coloring until the batter is evenly colored.
Step 7: Pour the batter evenly into the prepared pans.
Step 8: Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
Step 9: Remove cakes from the oven and cool in pans for 10 minutes. Then turn out onto wire racks to cool completely before frosting.

Notes

Use room temperature eggs and orange juice to ensure a smooth batter and even baking. Add a touch of lime zest to the batter for an extra burst of fresh citrus flavor.
