Ingredients
2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, melted
1 cup milk
1 teaspoon vanilla extract
1 teaspoon cinnamon
2 cups diced peaches (fresh or canned)
1/2 cup brown sugar
1/2 cup oats
1/2 teaspoon cinnamon for the topping
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
Step 2: In a large bowl, mix together the flour, sugar, baking powder, and salt until well combined.
Step 3: In another bowl, whisk together the melted butter, milk, vanilla extract, and cinnamon.
Step 4: Combine the wet ingredients with the dry ingredients, stirring until just blended (do not overmix).
Step 5: Gently fold in the diced peaches until evenly distributed.
Step 6: In a small bowl, mix together the brown sugar, oats, and cinnamon to create the streusel topping.
Step 7: Fill each muffin cup with the batter, then sprinkle the streusel topping over each muffin.
Step 8: Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Step 9: Let them cool for a few minutes before removing from the pan and serving.
Notes
Ensure peaches are drained well if using canned to prevent a soggy muffin base.
