Description

A classic, comforting, and incredibly easy rice pudding recipe that delivers creamy, sweet perfection every time. Perfect for a cozy dessert or a hearty breakfast.


Ingredients

1 cup Arborio rice (or short-grain rice)
4 cups whole milk
1/2 cup granulated sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon (plus more for garnish, optional)


Instructions

Step 1: Rinse the rice under cold water until the water runs clear. This helps remove excess starch, though with Arborio, some starch is desired for creaminess.
Step 2: In a heavy-bottomed saucepan or Dutch oven, combine the rinsed rice, whole milk, granulated sugar, and salt. Stir well to combine.
Step 3: Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent sticking. Once boiling, reduce the heat to low and simmer, uncovered.
Step 4: Continue to simmer for 25-30 minutes, stirring every 2-3 minutes to prevent the rice from sticking to the bottom of the pot. The rice should absorb most of the milk and become tender, and the pudding will thicken significantly.
Step 5: Once the easy rice pudding has reached a thick, creamy consistency and the rice is tender, remove the saucepan from the heat.
Step 6: Stir in the vanilla extract and ground cinnamon. Taste and adjust sweetness if desired.
Step 7: Serve warm or cold. Garnish with an extra sprinkle of cinnamon, fresh berries, or a dollop of whipped cream if desired. This easy rice pudding is best enjoyed fresh, but leftovers store well.

Notes

For an even richer flavor, you can infuse the milk with a cinnamon stick or a few strips of lemon zest while it warms, then remove them before adding the rice. For make-ahead, store in an airtight container in the fridge for up to 3-4 days. Reheat gently with a splash of milk if desired.
