Ingredients
3 large eggs, separated
1/2 cup cottage cheese, blended smooth
1/4 teaspoon cream of tartar
1 tablespoon honey
1/2 cup fresh blueberries
1 pinch sea salt
Instructions
Step 1: Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
Step 2: Blend the cottage cheese, egg yolks, and honey until completely smooth.
Step 3: In a clean bowl, whip egg whites and cream of tartar to stiff peaks.
Step 4: Gently fold the cottage cheese mixture into the whipped egg whites.
Step 5: Carefully fold in the fresh blueberries.
Step 6: Spoon the batter into 8 mounds on the baking sheet.
Step 7: Bake for 25-30 minutes until golden and firm.
Notes
Ensure the bowl for egg whites is completely grease-free to achieve maximum volume.
