A delightful make-ahead french toast bake recipe that's perfect for feeding a crowd, special occasions, or a lazy weekend brunch. Slices of challah bread soaked in a rich, spiced custard, baked until golden and fluffy, then finished with a sweet, crunchy topping.
Ingredients
1 loaf (approx. 13-16 ounces) challah or brioche bread, day-old, sliced into 1-inch thick pieces
8 large eggs
2 cups whole milk or half-and-half
1/2 cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
Pinch of salt
For the Streusel Topping:
1/2 cup packed light brown sugar
1/4 cup all-purpose flour
1/4 cup (4 tablespoons) unsalted butter, melted
1/2 cup chopped pecans or walnuts (optional)

Instructions
Step 1: Grease a 9x13-inch baking dish with butter.
Step 2: Arrange the sliced bread in a single layer in the prepared baking dish, overlapping slightly if necessary to fit.
Step 3: In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, cinnamon, nutmeg (if using), and salt until well combined and smooth.
Step 4: Pour the custard evenly over the bread slices in the baking dish. Gently press down on the bread to ensure every piece is fully saturated. Cover the dish tightly with plastic wrap and refrigerate for at least 4 hours, or ideally, overnight.
Step 5: The next morning, preheat your oven to 375°F (190°C). While the oven preheats, prepare the streusel topping. In a small bowl, combine the melted butter, brown sugar, and flour until crumbly. If desired, mix in chopped nuts.
