Description

A beloved traditional Mexican dessert featuring fresh, sweet strawberries bathed in a rich, creamy, and slightly sweet sauce. Simple to make, yet incredibly satisfying and perfect for any occasion.

1 lb (approx. 450g) fresh ripe strawberries
1-2 tbsp granulated sugar (optional, for macerating)
1 cup (240ml) Crema Mexicana (or substitute, see notes)
1/2 cup (120ml) sweetened condensed milk (adjust to taste)
1/2 tsp vanilla extract


Instructions

Step 1: Prepare the Strawberries. Gently wash your fresh strawberries under cool running water. Pat them dry thoroughly with paper towels. Hull the strawberries by removing the green tops, then slice them into bite-sized pieces. Aim for uniform slices for even distribution of flavor. Place the sliced strawberries in a large bowl.
Step 2: Sweeten the Strawberries (Optional, but recommended). For an extra burst of juiciness and to draw out their natural sweetness, you can sprinkle 1-2 tablespoons of granulated sugar over the sliced strawberries. Gently toss them and let them sit for about 10-15 minutes at room temperature. This process, called maceration, creates a lovely syrup.
Step 3: Prepare the Cream Mixture. In a separate medium bowl, combine the crema mexicana (or your chosen alternative), sweetened condensed milk, and vanilla extract. Whisk these ingredients together until the mixture is completely smooth, well combined, and has a luscious, pourable consistency. Taste and adjust sweetness if desired; remember the strawberries will also contribute sweetness.
Step 4: Combine Strawberries and Cream. Pour the prepared cream mixture over the sliced strawberries. Gently fold the strawberries into the cream until every piece is beautifully coated. Be careful not to mash the strawberries.
Step 5: Chill and Serve. For the best flavor and texture, cover the bowl and refrigerate your Fresas con Crema for at least 30 minutes to an hour. This allows the flavors to meld and the cream to thicken slightly. Serve chilled in individual bowls. For storage, use an airtight container to keep it fresh for up to 2-3 days in the refrigerator.

Notes

For the best results, use perfectly ripe, in-season strawberries. If Crema Mexicana is unavailable, a good substitute is a 1:1 mixture of full-fat sour cream and heavy cream. Adjust the sweetness of the cream mixture to your personal preference.
