Description

A simple, healthy, and customizable frozen treat made from Greek yogurt and your favorite toppings, perfect for a refreshing snack or light dessert.


Ingredients

2 cups (about 500g) plain Greek yogurt (full-fat or 2%)
2-4 tablespoons maple syrup or honey (to taste)
1 teaspoon vanilla extract (optional)
1/2 cup fresh mixed berries (strawberries, blueberries, raspberries), chopped if large
1/4 cup granola
2 tablespoons chopped nuts (almonds, pistachios, walnuts)
1 tablespoon chia seeds or flax seeds (optional)
A drizzle of melted dark chocolate (optional)


Instructions

Step 1: Line a large baking sheet (approximately 9x13 inches) with parchment paper, extending slightly beyond the edges for easy lifting.
Step 2: In a medium bowl, combine the Greek yogurt, maple syrup (or honey), and vanilla extract (if using). Whisk until thoroughly combined and smooth. Taste and adjust sweetness as desired.
Step 3: Pour the sweetened yogurt onto the prepared baking sheet. Using an offset spatula or the back of a spoon, spread the yogurt evenly into a layer about 1/4 to 1/2 inch thick.
Step 4: Generously sprinkle your chosen toppings (mixed berries, granola, chopped nuts, chia seeds) over the spread yogurt. Gently press the toppings into the yogurt to ensure they adhere well.
Step 5: If using, drizzle melted dark chocolate over the toppings in a decorative pattern.
Step 6: Carefully transfer the baking sheet to the freezer. Freeze for at least 2-4 hours, or until the frozen yogurt bark is completely solid and firm to the touch.
Step 7: Once fully frozen, lift the parchment paper with the frozen bark from the pan. Using your hands or a sharp knife, break the bark into irregular pieces of various sizes.
Step 8: Serve immediately. Store any leftover frozen yogurt bark in an airtight container in the freezer for up to 2-3 weeks.

Notes

For best results, use full-fat Greek yogurt for a creamier texture. Get creative with toppings like different fruits, seeds, nuts, spices (cinnamon!), or even a swirl of jam. Store extra bark in an airtight container in the freezer.
