Frozen Yogurt Granola Cups

Description

A refreshing, healthy, and crunchy frozen snack made with creamy Greek yogurt and honeyed granola.


Ingredients

Scale

2 cups plain Greek yogurt
1.5 cups granola
3 tablespoons honey
2 tablespoons melted coconut oil
1 teaspoon vanilla extract
1 cup fresh blueberries or sliced strawberries


Instructions

Step 1: Line a muffin tin with silicone liners and mix granola with coconut oil and 1 tbsp honey.
Step 2: Press the granola mixture firmly into the bottom of each muffin cup.
Step 3: Freeze the granola base for 15 minutes to set.
Step 4: Mix the Greek yogurt with vanilla and remaining honey until smooth.
Step 5: Layer the yogurt mixture over the granola bases.
Step 6: Top with fresh berries and press them slightly into the yogurt.
Step 7: Freeze for 4 hours until solid, then remove from liners and serve.

Notes

For a vegan version, use coconut yogurt and maple syrup.
