Description

A quick, healthy, and incredibly flavorful garlic chicken zucchini noodles stir fry that's perfect for busy weeknights. This low-carb dish is packed with tender chicken, crisp zucchini noodles, and a savory garlic-soy sauce.


Ingredients

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
4 medium zucchini, spiralized into noodles
2 tbsp olive oil or sesame oil, divided
8 cloves garlic, minced (about 2-3 tbsp)
1/2 cup low-sodium soy sauce (or tamari for gluten-free)
2 tbsp rice vinegar
1 tbsp brown sugar or honey
1 tsp ginger, grated (optional)
1/2 tsp red pepper flakes (optional, for heat)
2 tbsp cornstarch slurry (1 tbsp cornstarch mixed with 1 tbsp water)
Sesame seeds, for garnish
Chopped green onions, for garnish


Instructions

Step 1: In a medium bowl, whisk together the soy sauce, rice vinegar, brown sugar (or honey), grated ginger (if using), and red pepper flakes (if using). Set aside. In a separate small bowl, prepare the cornstarch slurry and set aside.
Step 2: Pat the chicken pieces dry with paper towels. Heat 1 tablespoon of olive oil or sesame oil in a large skillet or wok over medium-high heat. Add the chicken and cook until lightly browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
