Ingredients
1 lb (about 2 bunches) garlic scapes
2 tbsp extra virgin olive oil
1/2 lemon, juiced
1/4 cup freshly grated Parmesan cheese
1/4 tsp red pepper flakes (optional)
Sea salt to taste
Freshly ground black pepper to taste
Instructions
Step 1: Wash the garlic scapes thoroughly and pat dry. Trim off the fibrous flower bud tips and any tough ends. Cut the scapes into 1 to 1.5-inch pieces.
Step 2: Heat the olive oil in a large skillet or frying pan over medium heat. Once the oil shimmers, add the chopped garlic scapes to the pan.
Step 3: Sauté the garlic scapes for 5-7 minutes, stirring occasionally, until they turn bright green and become tender-crisp. They should still have a slight bite.
Step 4: Remove the skillet from the heat. Squeeze the fresh lemon juice over the scapes. Add the freshly grated Parmesan cheese and red pepper flakes (if using).
Step 5: Toss everything together gently until the Parmesan cheese begins to melt and coat the scapes. Season with sea salt and freshly ground black pepper to taste.
