1 teaspoon instant yeast
1 teaspoon granulated sugar
1 teaspoon salt
1 cup (240ml) warm water (105-115°F / 40-46°C)
2 tablespoons olive oil, plus more for greasing


Instructions

Step 1: In a large mixing bowl, whisk together the gluten-free all-purpose flour blend, instant yeast, sugar, and salt. Ensure these dry ingredients are well combined.
Step 2: Gradually add the warm water and 2 tablespoons of olive oil to the dry ingredients. Mix with a sturdy spoon or a stand mixer with a paddle attachment on low speed until a shaggy dough forms.
Step 3: Increase the mixer speed to medium-low and beat for 3-5 minutes. The dough will be softer and stickier than traditional wheat dough, but it should come together and be somewhat cohesive. If mixing by hand, knead in the bowl for about 5-7 minutes until smooth.
Step 4: Lightly grease a clean bowl with olive oil. Transfer the dough to the bowl, turning it once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rise in a warm place for 45-60 minutes, or until it has visibly increased in size (it may not double like wheat dough).
Step 5: Preheat your oven to 425°F (220°C) with a pizza stone or baking steel inside, if you have one. If not, a sturdy baking sheet will work. This high heat is crucial for a crispy crust.
Step 6: Gently punch down the risen dough. On a lightly floured surface (use gluten-free flour or rice flour), turn out the dough. Divide it in half if making two medium pizzas, or use the whole amount for one large pizza.
Step 7: Using your hands or a rolling pin, carefully shape the dough into your desired pizza crust size and thickness. Transfer the shaped dough to a piece of parchment paper lightly dusted with gluten-free flour. This makes transferring to the hot oven much easier.
Step 8: Prick the dough all over with a fork to prevent large bubbles from forming.
Step 9: Pre-bake the crust: Carefully slide the parchment paper with the dough onto the preheated pizza stone or baking sheet. Bake for 8-10 minutes, or until the crust is lightly golden and set. This par-baking step ensures a crispy base.
Step 10: Remove the crust from the oven. Now it's time for toppings! Spread your favorite pizza sauce, sprinkle cheese, and add your desired ingredients.
Step 11: Return the topped pizza to the oven and bake for another 12-18 minutes, or until the crust is golden brown and the cheese is bubbly and melted. Keep an eye on it to prevent burning.
