Ingredients
16 oz (about 2 cups) Grillo's Dill Pickles (or Hot Dill), finely minced
8 oz cream cheese, softened
1 cup sour cream (full-fat recommended)
2 tablespoons fresh dill, chopped
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon black pepper
Salt to taste (start with 1/4 teaspoon, adjust after tasting)
Instructions
Step 1: Finely mince the Grillo's pickles. You can use a food processor, but be careful not to over-process. Place the minced pickles in a fine-mesh sieve or a paper towel-lined bowl and press gently to remove any excess liquid. This step is crucial for a thick, creamy dip.
Step 2: In a medium-sized mixing bowl, combine the softened cream cheese and sour cream. Beat with an electric mixer or whisk until the mixture is completely smooth and free of lumps. Ensure both ingredients are at room temperature for best results.
Step 3: Add the drained minced Grillo's pickles, fresh chopped dill, garlic powder, onion powder, black pepper, and salt to the cream cheese mixture. Gently fold everything together until just combined. Avoid overmixing.
Step 4: Cover the bowl tightly with plastic wrap and refrigerate for at least 2 hours, or preferably 4-6 hours (or overnight). This chilling time allows the flavors to meld and deepen, resulting in a much more delicious dip.
Step 5: Before serving, give the dip a good stir. Taste and adjust seasonings as needed. If you prefer a slightly thinner consistency or an extra kick, add a teaspoon or two of pickle juice from the Grillo's jar. Serve chilled with your favorite dippers!
