Description

4 tbsp melted butter
8 oz cream cheese, softened

¼ cup sour cream
1 tsp vanilla extract
Green food coloring (as needed)

Red heart-shaped candies (for garnish)


Instructions

Step 1: Line a 12-cup muffin tin with paper liners. In a small bowl, combine the graham cracker crumbs and melted butter. Press about 1-2 tablespoons of the mixture firmly into the bottom of each muffin liner to form the crust.
Step 2: Place the muffin tin in the refrigerator to chill while you prepare the filling.
Step 3: In a large bowl, using an electric mixer, beat the softened cream cheese until smooth and creamy. Add the granulated sugar and continue to beat until well combined, scraping down the sides of the bowl as needed.
Step 4: Stir in the sour cream and vanilla extract until just combined. Be careful not to overmix.
Step 5: Add green food coloring, a few drops at a time, mixing after each addition until you achieve your desired vibrant Grinch green color.
Step 6: Spoon the green cheesecake mixture evenly over the chilled graham cracker crusts in the muffin tin.
