A spooky and delicious cheese ball shaped like a monster eye, perfect for your Halloween party, featuring the tangy flavor of dill pickles and a fun presentation.
Ingredients
16 oz (2 blocks) cream cheese, softened
1 cup shredded mozzarella or white cheddar
¼ cup chopped dill pickles
2 tablespoons pickle juice
2 tablespoons fresh dill, finely chopped (or 1 teaspoon dried dill weed)
1 packet (about 1 oz) ranch seasoning mix
Salt & pepper, to taste
1 round dill pickle slice
1 black olive slice
2–3 tablespoons hot sauce or sriracha
1–2 pretzel sticks
Instructions
Step 1: In a large mixing bowl, combine the softened cream cheese, shredded mozzarella (or white cheddar), chopped dill pickles, pickle juice, fresh dill (or dried dill weed), and ranch seasoning mix.
Step 2: Using a sturdy spoon or a hand mixer, mix all ingredients until well combined and relatively smooth. Taste and adjust with salt and pepper as needed.
Step 3: Transfer the cheese mixture to a piece of plastic wrap. Using the plastic wrap, form the mixture into a firm, round ball shape. This is your monster eye base!
Step 4: Refrigerate the cheese ball for at least 1 hour, or preferably 2-3 hours, to allow it to firm up and for the flavors to meld.
Step 5: Once chilled, carefully unwrap the cheese ball and place it on your serving platter.
Step 6: Decorate your monster eye. Place the round dill pickle slice in the center of the cheese ball for the 'iris.' Then, place the black olive slice in the very center of the pickle slice to create the 'pupil.'
Step 7: Using a small squeeze bottle or a spoon, carefully drizzle hot sauce or sriracha in thin, wiggly lines radiating out from the pickle slice, creating creepy 'bloodshot' veins.
Step 8: Gently insert one or two pretzel sticks into the back of the cheese ball to represent the 'optic nerves.'
Step 9: Serve immediately with your favorite crackers, pretzel thins, or vegetable sticks.
Notes
For best results, ensure cream cheese is fully softened. For extra tang, add a splash more pickle juice. Feel free to roll the completed cheese ball in extra chopped fresh dill for a 'hairy' effect before decorating the eye.
