Ingredients
2 lbs (900g) ground beef (80/20 recommended)
1 large egg, lightly beaten
1/4 cup plain breadcrumbs (or crushed saltine crackers)
1 tablespoon Worcestershire sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon smoked paprika
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (freshly ground is best)
Optional: 1-2 tablespoons finely chopped fresh parsley or chives
Optional: 1 tablespoon olive oil (for cooking on stovetop/oven)
Instructions
Step 1: In a large mixing bowl, gently combine the ground beef, beaten egg, breadcrumbs, Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper. If using, add the fresh parsley or chives. Mix gently and as little as possible to avoid overworking the meat, which can lead to tough patties.
Step 2: Divide the meat mixture into 6 equal portions (approximately 6 ounces each). Lightly roll each portion into a ball, then flatten it into a patty about 3/4 to 1 inch thick. Create a slight indentation (a dimple) in the center of each patty with your thumb to prevent it from puffing up during cooking.
Step 3: Place the formed patties on a plate or baking sheet lined with parchment paper. If not cooking immediately, cover and refrigerate for at least 30 minutes to help them firm up. Patties can be refrigerated for up to 2 days or frozen for up to 3 months.
Step 4: Preheat your grill (gas or charcoal) to medium-high heat (about 400-450°F / 200-230°C) or a cast-iron skillet over medium-high heat. Lightly oil the grates or skillet to prevent sticking.
Step 5: Place the patties on the hot grill or skillet. Cook for 4-6 minutes per side for medium-rare, 6-7 minutes per side for medium, or 8-9 minutes per side for well-done. Flip only once and avoid pressing down on the patties to retain juices.
Step 6: If adding cheese, place a slice on top during the last 1-2 minutes of cooking. Remove patties from heat and let them rest for 5 minutes before serving. This allows the juices to redistribute, ensuring a juicy burger.
