Description

A delicious, guilt-free, and safe-to-eat healthy cookie dough recipe made with chickpeas, almond flour, and natural sweeteners. Perfect for a quick snack or dessert!

Ingredients

Scale

1 (15-ounce) can chickpeas, rinsed and thoroughly patted dry
1/2 cup almond flour
1/4 cup maple syrup or honey (adjust to taste)
2 tablespoons creamy nut butter (almond, peanut, or cashew)
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup chocolate chips (dark chocolate recommended for healthier option)

Instructions

Step 1: Rinse and dry chickpeas: Drain the canned chickpeas and rinse them very thoroughly under cold water. Pat them completely dry with a paper towel or clean kitchen cloth. This is crucial for removing any 'bean' flavor.
Step 2: Process base ingredients: In a food processor, combine the dried chickpeas, almond flour, maple syrup (or honey), nut butter, vanilla extract, and salt. Process until completely smooth and creamy, scraping down the sides as needed. This may take 2-4 minutes, depending on your food processor. The mixture should resemble thick, smooth cookie dough.
Step 3: Fold in chocolate chips: Transfer the dough to a medium bowl. Fold in the chocolate chips until evenly distributed.
Step 4: Chill and serve: For best results, cover the bowl and refrigerate the healthy cookie dough recipe for at least 30 minutes to allow it to firm up and flavors to meld. Serve by the spoonful, rolled into small balls, or as a topping for ice cream. Enjoy your healthy cookie dough recipe!

Notes

For a richer chocolate flavor, add 1 tablespoon of unsweetened cocoa powder along with the other base ingredients. If the dough is too thick, add a teaspoon of milk (dairy or non-dairy) at a time until desired consistency is reached. Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 1 month.
