Ingredients
1 cup cottage cheese
1 cup grated carrots
1 cup rolled oats
1/4 cup honey
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
1/4 cup chopped walnuts
Instructions
Step 1: Preheat oven to 350°F (175°C) and line an 8x8 inch pan with parchment paper.
Step 2: In a bowl mix cottage cheese, grated carrots, honey, cinnamon, nutmeg, and vanilla until well combined.
Step 3: Stir in rolled oats and chopped walnuts until evenly distributed throughout the mixture.
Step 4: Spread mixture into prepared pan and bake for 25-30 minutes until edges are golden and center is set.
Notes
Allow to cool completely for the best texture. Can be made with maple syrup for a vegan-friendly sweetener option.
