Description

4 (6 oz) salmon fillets, skin on or off
1 lb asparagus, woody ends trimmed
1 pint cherry tomatoes, halved
2 tbsp olive oil
1 lemon, zested and juiced
2 cloves garlic, minced
1 tsp dried oregano (or 1 tbsp fresh)
1/2 tsp dried thyme (or 1.5 tsp fresh)
Salt and freshly ground black pepper to taste
Fresh parsley or dill, chopped, for garnish (optional)


Instructions

Step 1: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Step 2: In a small bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, dried oregano, and dried thyme. Season with salt and pepper.
Step 3: Place the asparagus and cherry tomatoes on one side of the prepared baking sheet. Drizzle about half of the lemon-herb mixture over the vegetables and toss to coat evenly.
Step 4: Place the salmon fillets on the other side of the baking sheet, ensuring they are not touching the vegetables if possible. Drizzle the remaining lemon-herb mixture over the salmon fillets.
Step 5: Bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender-crisp. Cooking time will vary based on the thickness of your salmon fillets.
Step 6: Remove from the oven. Garnish with fresh chopped parsley or dill, if desired. Serve immediately and enjoy your healthy summer dinner!

Notes

For extra flavor, you can marinate the salmon for 15-30 minutes before baking. Ensure vegetables are spread in a single layer for best roasting results. If you prefer crispier vegetables, you can roast them for 5-7 minutes before adding the salmon to the pan.
