Ingredients
2 boneless, skinless chicken breasts (about 1 lb total)
1 tbsp olive oil (for chicken)
Salt and black pepper to taste
8 cups mixed greens (spinach, romaine, spring mix)
1 cup fresh strawberries, halved or quartered
1 cup fresh blueberries
1/2 cup fresh raspberries
1/4 cup red onion, thinly sliced
1/4 cup crumbled goat cheese or feta (optional)
1/4 cup toasted pecans or walnuts (optional)
For the Poppy Seed Dressing:
1/4 cup apple cider vinegar
2 tbsp olive oil (for dressing)
1 tbsp honey or maple syrup
1 tsp Dijon mustard
1/2 tsp poppy seeds
Salt and pepper to taste
Instructions
Step 1: Prepare Chicken: Pat chicken breasts dry with paper towels. Rub with 1 tbsp olive oil, and season generously with salt and black pepper.
Step 2: Grill Chicken: Preheat grill or grill pan to medium-high heat. Grill chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). Remove from heat, let rest for 5 minutes, then slice into bite-sized pieces.
Step 3: Make Dressing: In a small bowl or jar, whisk together apple cider vinegar, 2 tbsp olive oil, honey (or maple syrup), Dijon mustard, poppy seeds, salt, and pepper until well combined and emulsified.
Step 4: Assemble Salad: In a large serving bowl, combine mixed greens, strawberries, blueberries, raspberries, and thinly sliced red onion.
Step 5: Add Chicken and Toppings: Add the sliced grilled chicken to the salad. If using, sprinkle with crumbled goat cheese or feta and toasted pecans or walnuts.
