Ingredients
1 cup low-fat cottage cheese
2 ripe bananas mashed
1 cup oat flour
1/4 cup unsweetened cocoa powder
1/4 cup honey
1 teaspoon baking powder
0.5 teaspoon vanilla extract
0.25 cup mini dark chocolate chips
Instructions
Step 1: Preheat oven to 350°F (175°C) and lightly grease or line a mini muffin pan with paper liners.
Step 2: In a blender or food processor, blend the cottage cheese until completely smooth, then transfer to a bowl and stir in the mashed bananas, honey, and vanilla extract.
Step 3: Add the oat flour, cocoa powder, and baking powder to the wet mixture, stirring until just combined, then fold in the mini dark chocolate chips.
Step 4: Spoon the batter evenly into the mini muffin cups and bake for 15-18 minutes until a toothpick inserted in the center comes out clean.
Notes
Ensure you blend the cottage cheese until no curds remain for the best mouthfeel. Use very ripe bananas for maximum sweetness.
