Instructions

In a medium-sized mixing bowl or a glass food storage jar with a tight-fitting lid, combine the extra virgin olive oil, red wine vinegar, water, Dijon mustard, minced garlic, dried oregano, dried basil, dried thyme, red pepper flakes (if using), salt, black pepper, and optional sugar/maple syrup.
Step 2: Whisk or shake until emulsified. If using a bowl, whisk vigorously for 1-2 minutes until the dressing is well combined and slightly thickened. A good whisking is key to ensuring the oil and vinegar emulsify properly. If using a jar, screw on the lid tightly and shake vigorously for 30-60 seconds until everything is fully incorporated and emulsified. The mixture should look creamy and slightly opaque, not separated.
Step 3: Taste and adjust. Dip a small piece of lettuce or a spoon into the dressing and taste. This is where you can truly make it your own!
