Description

Elevate your salads with this vibrant, easy-to-make homemade Italian dressing. Bursting with fresh herbs, garlic, and quality olive oil, it's a thousand times better than store-bought and incredibly versatile. Perfect for salads, marinades, or dipping!

Ingredients

Scale

1/2 cup (120ml) extra virgin olive oil
1/4 cup (60ml) red wine vinegar
2 cloves garlic, minced (about 1 teaspoon)
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of red pepper flakes (optional, for a kick)
Optional: 1/2 teaspoon Dijon mustard (for emulsion and flavor)
Optional: 1 teaspoon sugar or honey (for sweetness, if desired)

Instructions

Step 1: In a medium bowl or a jar with a tight-fitting lid, combine the red wine vinegar, minced fresh garlic, dried oregano, dried basil, onion powder, salt, black pepper, and red pepper flakes (if using). Whisk or shake vigorously until well combined.
Step 2: Slowly drizzle in the extra virgin olive oil while continuously whisking or shaking. Continue until the dressing is well emulsified and appears smooth and cohesive.
Step 3: Taste the dressing and adjust seasonings as needed. Add more salt, pepper, or a pinch of sugar or honey if you prefer a slightly sweeter profile.
Step 4: For best flavor, let the dressing sit for at least 15-30 minutes before serving, allowing the flavors to meld.
Step 5: Store any leftover homemade Italian dressing in an airtight container in the refrigerator for up to 1 week. If the olive oil solidifies, let it come to room temperature and shake well before using.

Notes

For optimal flavor, allow the dressing to sit for at least 15-30 minutes before serving, or even longer in the refrigerator. If using dried herbs, letting them bloom in the vinegar before adding oil enhances their flavor.
