Description
Incredibly soft and chewy cookies filled with fresh, juicy peach chunks and a hint of vanilla.
Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup light brown sugar, packed
1 large egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1 cup fresh peaches, finely diced and blotted dry
1/2 cup white chocolate chips (optional)
Instructions
Step 1: Preheat oven to 350°F and line baking sheets with parchment paper.
Step 2: Dice peaches into small cubes and blot thoroughly with paper towels to remove moisture.
Step 3: Cream butter and both sugars in a mixer until light and fluffy.
Step 4: Mix in the egg and vanilla extract until fully combined.
Step 5: Whisk together flour, baking soda, and salt, then gradually add to wet ingredients.
Step 6: Carefully fold in the blotted peach pieces and optional white chocolate chips.
Step 7: Scoop tablespoon-sized portions of dough onto the sheets, spaced 2 inches apart.
Step 8: Bake for 10-12 minutes until edges are golden but centers are soft.
Step 9: Cool on the pan for 5 minutes before moving to a wire rack.
Notes
Ensure peaches are blotted extremely dry to prevent cookies from spreading too much.
